Fitness Tip: Tree Pose!

1. Start in mountain pose, standing straight and tall. Breathe in and out. Now imagine that your legs are changing from the base of a mountain to the trunk of a tree. Pick one spot in front of you to look at, to keep your eyes steady and help with balance.

2. Lift and bend your right leg. Turn your knee out, and place your right foot on your left leg, above the knee (or below the knee, but not directly on the knee). Imagine your left foot rooted into the ground and your left leg is strong like the trunk of the tree.

3. Now stretch your arms above your head, up like branches. Don't worry if you start to fall or find that you sway - you're simply a tree swaying in the wind.

4. When you are ready to come down, lower your arms and place your right foot back on the ground. Then try the pose on the other side.

1/2 cup quinoa
1 half red bell pepper (diced)
1 half orange bell pepper (diced)
1 half yellow bell pepper (diced)
1/2 cup shredded carrots
1 half medium avocado (diced)
juice of half a lemon
1/4 cup raisins
1/2 cup crumbled feta cheese
1/4 cup fresh parsley chopped
6 mini whole wheat pita breads
2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
3oz plain greek yogurt
1 teaspoon dijon mustard
juice of half a lemon
1/8 cup apple juice
1/2 tablespoon tahini (optional)
sea salt to taste
pepper to taste
Cook quinoa according to package instructions. In large bowl, combine peppers, carrots, avocado, lemon, parsley, raisins and feta cheese. Once the quinoa has cooled, gently fold into bowl and combine with other ingredients. In separate bowl, whisk together all dressing ingredients. Carefully cut an opening into the pita bread and fill with quinoa vegetable salad. Drizzle dressing into pita pocket, close pita and enjoy!
